Cherry And Chocolate: A Perfect Combination

In the last post, I showed you how I made a cherry-chocolate preserve. Today, we're going to use it to make amazingly delicious muffins with a cherry-chocolate filling. Let's get started!
What you need (6 muffins)
- 140g all-purpose flour
- 1 egg
- 30g cocoa powder
- 60g sugar
- 150ml milk
- 30g vegetable oil
- 1/2 tsp baking soda
- 100g cherry-chocolate preserve
What you need to do
- Preheat the oven to 180°C (356°F)
- Prepare two bowls. In the first bowl, mix the flour, cocoa powder, sugar, and baking soda. In the second bowl, whisk together the egg, milk, and oil.
- Pour the wet mixture into the dry ingredients and mix until just combined — the batter doesn’t need to be perfectly smooth.
- Prepare a muffin tin (I use a silicone one).
- Spoon the batter into each cup, filling them about one-third full.
- Using a teaspoon, distribute the preserve evenly across all muffins. Try to place it in the center so it doesn’t touch the edges of the mold.
- Pour the remaining batter over the top.
- Bake for 25-30 minutes. Enjoy!
