Cherry And Chocolate: A Perfect Combination

In the last post, I showed you how I made a cherry-chocolate preserve. Today, we're going to use it to make amazingly delicious muffins with a cherry-chocolate filling. Let's get started!

What you need (6 muffins)

  • 140g all-purpose flour
  • 1 egg
  • 30g cocoa powder
  • 60g sugar
  • 150ml milk
  • 30g vegetable oil
  • 1/2 tsp baking soda
  • 100g cherry-chocolate preserve

What you need to do

  1. Preheat the oven to 180°C (356°F)
  2. Prepare two bowls. In the first bowl, mix the flour, cocoa powder, sugar, and baking soda. In the second bowl, whisk together the egg, milk, and oil.
  3. Pour the wet mixture into the dry ingredients and mix until just combined — the batter doesn’t need to be perfectly smooth.
  4. Prepare a muffin tin (I use a silicone one).
  5. Spoon the batter into each cup, filling them about one-third full.
  6. Using a teaspoon, distribute the preserve evenly across all muffins. Try to place it in the center so it doesn’t touch the edges of the mold.
  7. Pour the remaining batter over the top.
  8. Bake for 25-30 minutes. Enjoy!
