Leftover rice? No problem!

Cooked too much rice the other day and don’t know what to do with it? Here’s a quick and easy recipe for a satisfying breakfast.
What you need
- 100g cooked rice
- 60g flour
- 60ml milk
- 60ml water
- 1 egg
- Your favorite toppings. In my case:
- 1/2 banana
- A few strawberries
- 3 tbsp plain yogurt
- Maple syrup
What you need to do
- Put the flour, milk, water, and egg into a bowl. Mix until well combined.
- Add the rice to the batter and mix well.
- Preheat a pan over slightly above medium heat. Lightly spray with oil if desired.
- Pour the batter into the pan and fry for 3–5 minutes on each side, until golden brown. I made 6 small pancakes from this amount.
- Serve with your favourite toppings. Enjoy!
