Leftover rice? No problem!

Cooked too much rice the other day and don’t know what to do with it? Here’s a quick and easy recipe for a satisfying breakfast.

What you need

  • 100g cooked rice
  • 60g flour
  • 60ml milk
  • 60ml water
  • 1 egg
  • Your favorite toppings. In my case:
    • 1/2 banana
    • A few strawberries
    • 3 tbsp plain yogurt
    • Maple syrup

What you need to do

  1. Put the flour, milk, water, and egg into a bowl. Mix until well combined.
  2. Add the rice to the batter and mix well.
  3. Preheat a pan over slightly above medium heat. Lightly spray with oil if desired.
  4. Pour the batter into the pan and fry for 3–5 minutes on each side, until golden brown. I made 6 small pancakes from this amount.
  5. Serve with your favourite toppings. Enjoy!
