Old Bread, Expired Mozzarella, and a Duck - Bruschetta Makeover

I found a ball of mozzarella in my fridge that was three days expired. I also had some stale bread and half a tomato from the day before, so... I made bruschettas. And they were so good!

What you need

  • 4 slices of bread
  • 2 small duck breasts
  • 1/2 tomato and 8 cherry tomatoes (or 1 whole tomato and 4 cherry tomatoes)
  • 1 ball of Mozzarella (100g)
  • Basil (dried or fresh)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper

What you need to do

  1. Preheat the oven to 180°C (356°F).
  2. Heat a pan over medium heat. Place the duck breasts skin-side down and sear for about 5 minutes, until the skin is browned.
  3. Transfer the duck breasts to a baking dish and roast for 30 minutes (or 25 minutes if you prefer them slightly rare).
  4. Meanwhile, dice the tomatoes and mozzarella, and place them in a bowl.
  5. Sprinkle them with basil, drizzle with olive oil and balsamic vinegar, season with salt and pepper, and mix well.
  6. Once the duck is done, remove it from the oven and let it rest for 5–10 minutes.
  7. Toast the bread in a toaster, pan, or oven—whichever you prefer (I used a toaster).
  8. Cut the duck into cubes (I removed the skin, but feel free to keep it if you like) and mix it with the tomato-mozzarella mixture.
  9. Spoon the mixture onto the toasted bread. Enjoy!
