Save Your Cucumbers - Easy Asian-Style Pickles

When your vegetables aren’t as fresh as you’d like, you can always turn them into delicious pickles and give them a second life. Here, I used a 500ml jar along with some older cucumbers. Later, I’ll show you how to use them in an actual dish.

What you need

  • 3 cucumbers
  • 1 cloves garlic 
  • 200ml water
  • 100ml rice vinegar 
  • 1–4 tsp sugar, depending on how sweet you like it
  • 1 tsp salt 
  • 1 tsp sesame oil 
  • 1 tsp Gochugaru chili flakes (optional)

What you need to do

  1. Slice cucumbers, then place them in a jar.
  2. Slice the garlic and add it in the jar.
  3. In a small pot, combine the water, rice vinegar, sugar, salt, sesame oil, and chili flakes.
  4. Heat over medium until it comes to a boil, then immediately pour the hot mixture into the jar.
  5. Seal the jar and let it sit for 1-2 days before using! Enjoy!
