Sushi Bowl with Leftover Salmon

Another day, another win! I hate throwing away leftovers… I still do sometimes, but this time the salmon got saved—and made it to my belly!

What you need (1 serving)

  • 100g sushi rice
  • Leftover salmon (mine was 170g)
  • 1 cucumber
  • 1 handful of spinach
  • 1 tbsp light soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil

What you need to do

  1. Cook rice according to the package instructions. (For mine: 100 g rice with 150 ml water, cover with a lid, simmer for 15 minutes, then let it sit for another 15 minutes.)
  2. Cut the cucumber and salmon into cubes, and chop spinach.
  3. Mix the dressing ingredients and pour them over your salad. 
  4. Sprinkle sesame seeds on top. Enjoy!
