Sushi Bowl with Leftover Salmon

Another day, another win! I hate throwing away leftovers… I still do sometimes, but this time the salmon got saved—and made it to my belly!
What you need (1 serving)
- 100g sushi rice
- Leftover salmon (mine was 170g)
- 1 cucumber
- 1 handful of spinach
- 1 tbsp light soy sauce
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
What you need to do
- Cook rice according to the package instructions. (For mine: 100 g rice with 150 ml water, cover with a lid, simmer for 15 minutes, then let it sit for another 15 minutes.)
- Cut the cucumber and salmon into cubes, and chop spinach.
- Mix the dressing ingredients and pour them over your salad.
- Sprinkle sesame seeds on top. Enjoy!
